Peanut Butter and Fig Parfait
One of my favorite fruits this summer has been figs. This parfait has been my go to breakfast or snack whenever I have them on hand since its really quick to put together and requires pretty much no effort.
Recipe
1/3 cup mission or black figs, quartered (about 2-4 figs depending on the size)
2 tbsp peanut butter (I like Laura Scudder’s)
1/2 cup greek yogurt
Combine all of the ingredients in a bowl and enjoy!
